This is the roasting box that cooks traditional Cuban roast pig until the meat is moist and tender and the skin is crispy—the hallmarks of authentic lechón asado. The roaster accommodates whole pigs up to 80 lbs. (dressed), charcoal is placed in a metal tray on top of the unit, and the coals emit radiant heat to the cooking chamber that’s lined with marine-grade aluminum. Two chrome-plated steel racks latch around the pig, allowing cooks to lower it into the box, lift it out, and flip it over. The roaster also cooks up to eight whole chickens, three turkeys, or six slabs of ribs and comes with a culinary syringe for injecting marinade into meat, a built-in thermometer, and a grate for traditional grilling above the charcoals.
